Keto Bacon Cheesy Casserole with Cauliflower and Broccoli.

Ingredients

-1 package of Bacon

-1/4 head cauliflower

-1/4 head broccoli

-1/2 cup Queso cheese

-4-6 slices of Swiss cheese

-1 bunch of green onions

-2 chicken sausage links (you may use other sausages if you like that is already cooked)



Directions for cooking


Cut cauliflower & broccoli into small florets. Steam for six to seven minuets. While cauli/broc is steaming, we are going to chop our green onions, bacon, and sausages. Chop all the green onions into small pieces. Chop 4 slices of bacon into small bits. Than, slice the two chicken sausage links.


Our steaming cauli/broc should be down now. Nice and tender. Use a strainer and strain our broc/cauli combo.


Time to cook our bacon pieces. Use a non stick pot. Pan fry until crispy gold.


The rest of the six slices of bacon we can cut each slice into fours. Put aside and save for later. We will layer them on our casserole .


Now, we can slice our chicken sausage links. You can use different type of sausage if you like. Like, pork or beef sausages that is already cooked. Slice these into thin slices. As thin as you like. I'm slicing them 1/4 inch thick.


Because pieces should be golden brown and crispy. Take out our bacon but leave the bacon grease in the pot. We are going to make a creamy sauce mixture and pour it over our casserole. Pour 1 cup heavy whipping cream into the bacon grease. Season with salt, pepper, garlic powder to taste. Also, add in all of our chopped green onions that we chopped earlier. Let simmer for about 6-8 minutes.


Preheat oven to 425 degrees Fahrenheit.


In an oven safe casserole tray we will now add all our ingredients together. Put a layer of Queso cheese about 1/4 inch thick for our first layer. Sprinkle our golden crispy bacon pieces evenly. Add our cauli/broc. Than, evenly distribute our chicken sausages. Pour our creamy goodness mixture in. Crack open four large eggs onto our casserole. The eggs will be pouch when baked in the oven. We now layer another layer of cheese. This time its going to be Swiss cheese slices. Finally, our favorite bacon slices, that we cut into fours earlier, we can layer them as our final layering. Making sure it is neatly packaged so nothing spills out while baking. In the oven it goes for about 40 to 50 minutes. Or, until our bacon is nicely golden and crispy. Let cool for 10 minutes or so. Serve.
