Keeping it Keto as always with this Vietnamese style caramelized & braised pork with eggs. Called "Thit Kho Trung" in Vietnamese. If you have Vietnamese food cravings, this is an easy recipe you can use to satisfy your desire.

Instant Pot is cheaper but it doesn't have the air frying function as well. I would rather have one gadget that does everything than two.

1.5 lb pork belly or pork equivalence
1 whole red onion
6 garlic cloves
4 green onion
78 grams of ginger

Step one. Marinade our pork
Cut pork into an inch or two inch pieces and set aside. We are now going to take some veggies to make our marinade. Take 1/8 of red onion and roughly chop. Take 1 green onion roughly chop. Take 3 cloves garlic and roughly chop. Take 28 grams or 1 ounce ginger and roughly chop. Put all into a processor. Mince them a little bit. Now add in 2 tbsp sesame seed oil and 1 tbsp fish sauce. Finally, process them until it all becomes kind of like a paste. Mix our marinade with our pork and leave in refrigerator for two hours.
Step two Prepare veggies
Cut celery into one to two inches in size. Cut green onions into two inch in size. Cut the red onions into 1/8 sizes. Make sure to cut the butts of the red onions. Smash three cloves of garlic and put all the veggies to a side.
Step three Eggs
Boil three eggs for about 15 minutes. You can boil more eggs if you prefer. Up to you. When done, take out shell and set a side for later.
Step four Saute / Sear
You can do this on stove top if you don't have a Ninja Foodi or Instant Pot.
In a Ninja Foodi or an Instant Pot that has Saute/Sear function and Pressure cook function, we will turn on saute and sear function on. When saute/sear is onto high, add in two tbsp butter and two tbsp avocado oil. When oil reach a smokey temperature add in our marinaded pork. Searing it will help give our pork another depth of flavors. While the pork sears and sautes we are going to melt 1/8 cup monk fruit sweetener (Natural sweetener substitute). This will caramelize our pork with sweetie goodness. When melted add into pork and mix well. Now add in 1/8 cup fish sauce into our pork. This will give us our salty goodness. We can add our veggies from Step Two and sear them a bit as well. Than, add in our eggs.
Step Five Pressurize cook
We can pop on our Pressure Cooker's lid on now. Turn Pressure cook to High. and Pressure cook for 30 minutes. When It is done, you can let it naturally release air by doing nothing for 15 minutes and then let the steam out from the vents.
Step Six Enjoy
Last step is the best. Just eat it and enjoy. Done. Yummy as Fuck.
