Keto Low Carb Chocolate Cupcakes with Keto Low Carb Frosting

I never knew how easy it was to make keto desserts. It's almost the same as making regular people's way. Until I started making my own desserts. Please make this at home and enjoy.




Ingredients list Cupcakes

1/2 of warm water

2 large eggs

Ingredients list for Frosting

Lily's milk chocolate chip sweetened with Stevia and zero sugar https://amzn.to/2CB83gn


Making the cupcakes

You should almost always mix dry ingredients first then add in wet ingredients and mix thoroughly with a hand blender. Dry ingredients mix together easier when there is no liquid present. When mixing everything together, make sure you don't leave any lumps of flour or powder.


Now, take out cupcake tray and line with cupcake parchment paper. Fill each parchment paper 3/4 of the way up. Almond flour and coconut flour doesn't rise much when baking.


With your oven already preheated to 325 degrees Fahrenheit. Bake cupcakes for 30 minutes. Use a toothpick and do a toothpick test by poking it with the toothpick and if the toothpick comes out clean it means your cupcakes are done.


Take cupcakes out of the oven. Leave to cool for about 30 minutes to an hour.



Chocolate frosting

While they rest we can prepare our frosting. Make sure butter and cream cheese are room temperature. Cube our cream cheese and butter and put it into a mixing bowl. If the cream cheese and butter is not soft enough you can microwave in 10-second intervals until desired softness. When our cream cheese and butter is soft enough we can add in our powdered swerve erythritol, liquid stevia, and cacao powder. Use a fork or spoon and mix with your hands first before we use a hand mixer. This way the powder doesn't fly everywhere. Then, use a hand mixer and mix until well incorporated.


Put frosting in a piping bag and pipe on our frosting. If you don't have a piping bag you can use a butter knife or something to spread the frosting on. You can also sprinkle on some Lily's milk chocolate chip sweetened with Stevia with zero sugars.


You can put the frosted cupcakes in the refridgerator and it will harden the frosting more. Or, you can just enjoy the way it is.
