Keto Fried Rice Bacon and Chinese sausages Vietnamese style

If you prefer, you can replace cauliflower rice with regular white jasmine rice. Or, rice of your choice. But, I think it's still freaking delicious with the caulirice.

1/2 Head Cauliflower - cut into florets and use processor to lightly process into rice size

1/2 of a bunch of green onions chopped and separate the white part from the green part

4 cloves garlic minced

2 eggs

2 tbsp vegetable broth

5 slices of bacon

2 Chinese sausage links - chopped into small pieces -

(If you can't find the California Sausages Inc. brand you can use this brand Kam Yen Jan)

1 tbsp soy sauce

salt, pepper, garlic powder to tastes. About 1 tsp each

cooking spray or oil of choice

Directions for cooking

Heat up frying pan to medium high. Cook bacon to desire crispiness. Take out bacon. Leave the bacon grease for cooking cauliflower rice. Now, add garlic in the pan of bacon grease. In a few minutes add in the white part of chopped green onions. Cook for a few minutes than add in the cauliflower rice. Wait few minutes and add in vegetable broth. This is a good time to add in 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder. Bring down heat to medium/medium low and simmer until the vegetable broth i evaporated. This will make the rice more tender. After all that add in the chopped Chinese sausages the cauliflower. The sausages will cook real fast. So, you don't have to worry if the are done or not. Leave the heat at medium low.

In a mixing bowl, crack and add in the two eggs. add in half of the green part of the green onions. The other half throw them in the cauliflower. Give a good mix in the cauliflower. Now, in the egg bowl, add in 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder. Give it a good whisk.

Heat up another frying pan and add oil or cooking spray. Poor in the egg mixture. Coat the whole bottom of the pan with the eggs. make sure to cook thoroughly on both size. Take eggs out onto cutting board. Slice into thing slices and put into cauliflower rice. Mix together and you are done. Easy peasy lemon squeezy.
