I made some delicious keto Peanut butter cups. But instead of peanut butter, I used sunflower seed butter. Lower in net carbs yet still delicious.

Step One
Melt chocolate, butter, and coconut oil in the microwave. Microwave in 30-second burst's. I did two 30 second intervals. Chocolate burns real easy. You don't want to overheat them.
Step two
Add in vanilla extract, Liquid Stevia, and Monk Fruit Sweetener. Mix well so everything is incorporated.
Step three
take out a muffin/cupcake tray and line with cupcake parchments. Add in about 1/2 a tbsp to 1 tbsp of our dark chocolate mixer to all 12 cupcake parchment cups. Tap the cupcake tray to even out the chocolate and put in the freezer for 15 minutes to harden.
Step four
Take out the cupcake tray that we froze for 15 minutes. Now we can add in our peanut butter. In my case, I used sunflower seed butter with zero sugar. It was about 2 net carbs per 2 tablespoons. zero sugar peanut butter or zero sugar almond butter will work as well. But, those have a little higher net carb count. In each cupcake parchment, we can add in about 1/2 a tbsp of sunflower butter. After filling all 12, tap the cupcake tray to even out the sunflower butter.
Step five
Now we can add in the rest of our unfrozen chocolate. Add about 1/2 tablespoon to each cupcake parchment cups. Or, whatever that is left. When done with all 12, sprinkle some unsweetened shredded coconut on top and put the tray into the freezer for at least one hour to freeze. Sunflower seed butter doesn't really get frozen. So, when you take it out of the freezer it will be a little mushy.
Step six
Any time you feel like a snack, take out these delicious little bad boys and enjoy. BTW. They are considered Fat Bombs because it's pretty much made of all fats.
