Delicious Low Carb Vietnamese Style Malabar Spinach Soup With Okra and shrimp.

Canh Rau Mồng Tơi Đậu bắp tôm

Ingredients

1/4 to 1/2 lb Malabar Spinach (Vietnamese Spinach) https://amzn.to/2Ox2THQ

1/2 lb WIld Caught Shrimp https://amzn.to/2OuUHI9

2 minced cloves Garlic https://amzn.to/2OtzRJg

1 to 2 tbsp Fish Sauce https://amzn.to/37kTvQe

Dash of freshly crushed black peppercorns https://amzn.to/2QBp7et

Step 1

Prepare shrimp

Make sure shrimp is clean and washed. Then, cut shrimp in half and devein them. Take the broad side of a knife and lightly smash shrimp. This will bring out all the shrimpy flavors.

Step 2

Brown and saute shrimp

Heat a pot and add in butter. Once butter is melted add in minced garlic. When the aroma of garlic is infused into butter you may add in our shrimp. Shrimp is pretty fast to cook. So, just cook them until they are nice and gold brown. Also, add in about 1 tbsp of Fish Sauce. Stir to well incorporate. Once shrimp is cooked you can add in water and bring water to a boil.

Step 3

Prepare Malabar and Okra

Using a cutting board, cut okra into inch size pieces. You can also cut our Malabar spinach (Vietnamese spinach) as well. Once the water is to a boil we can add in our Malabar and okra. cook with the lid on for about 10 to 15 minutes. Then, serve and eat.
