Keto version of McDonald's McGriddle. Or rather, A McChaffle. If you don't know what a "Chaffle" is, it is a keto version of a waffle but only uses cheese and eggs as it's base ingredients.

Step by step how to
We can start by crisping up our 4 bacon slices. In a frying pan, turn heat and add in our bacon slices. When bacon is done, we can use the bacon oil drippings and cook our sausages in it. Cook to preferred crispiness. be careful not to burn them. When bacon is done you can put them on a paper towel. The paper towel will absorb the excess oils making them crispier.
We can prepare our sausage patties while the bacon is cooking. The patties that come in our Johnsonville Sausage is kind of small. So, to make them bigger we can take three of the small patties, two if you don't want them that meaty, and mash them together and form a ball. Once a ball is formed we can flatten it into a desired patty shape. Preferably the thinner the more thorough it will cook through. I made two of these and it took a total of 6 small patties for me. But, make them as big and meaty as you want. I also made a dimple in the middle of these patties so they won't curl when we cook them.
Now, we can use the bacon grease from our bacon to cook our sausage patties in. Giving them extra flavor. Cooking them 3 to 4 minutes each side. After I flip once, I wait 2 minutes and then put on our pepper jack cheese slices. You can use practically any type of cheese slices you want. LIke, mozzarella or cheddar. It's up to your preference. After we put on the cheese we can cook for another 2 minutes and it should be done. take off the frying pan and set aside.
At the same time in another frying pan, we can cook our egg. I cooked a sunny side up egg until the yolk became fully cooked. You can cook the egg in any style you like. I would rather have the yolk a little bit runny. but, it is to your preference.
Once all of our McGriddle meat, egg, and cheese are done, we can make our Chaffle. Our chaffle is the keto version of a waffle that only needs two ingredients. Egg and cheese. We will also use maple flavor natural sweetener monk fruit syrup. So our waffle, or rather "Chaffle", tastes just like Mcdonald's McGriddle's pancakes.
Break and whisk one egg in a bowl. One egg will make two chaffle/waffle. We will need two to make our McGriddle like a sandwich. Using our Dash Mini, or waffle maker of your choice, we will add in 1/8 cup of shredded cheddar cheese. Spread the cheese evenly. Then, half of our whisked egg on top of the cheese. Then, another 1/8 cup of shredded cheddar cheese. Be sure to spread the cheese out evenly. You can also use mozzarella cheese too. Close the lid and in about 5 to 6 minutes our waffle/chaffle is done. You will notice our waffle/chaffle is done when there is no more steam coming out of it.
Once our chaffles are done we can assemble our McChaffle. On top of one chaffle add two bacon slices. Then, the two sausage patties with the melted pepper jack cheese one it. than another two slices of bacon. Then, our sunny side up egg. Finally our last chaffle. Making this one hell of a delicious breakfast sandwich.
